@snowy Everything home made except the chicken. Pate, pickled veg, marinade all from ingredients I had at hand. Own chilli sauce and mayo. Just haven't been able to nail the correct mix of crunchy crust and fluffy interior for the bread. Latest batch definitely had the crisp crunch and the give but still a little denser than I like but definitely going to try again. My previous baguette recipe took fucking hours for an inferior result so definitely a positive for me.
Cooked a gammon last week and have a sharp cheddar so lunches for the week are Sorted!

Here's the recipe for the easy baguette
The rest I don't have recipes as such for I use a chicken liver pate I've been making for nearly 40 years. Pickle some daikon and carrot. I find rubbing the matchsticks with salt to extract moisture until you can bend them so the two ends touch without breaking before pickling gives a crunchier result.
Marinade the meat in fish sauce lemongrass garlic ketjap manis brown sugar pepper whatever I have to hand
Always have srirachi in larder and had an egg to make some mayo. Missed cucumber and fresh herbs but was still a good lunch
I could live on Vietnamese. My Heart of Darkness Saigon Hazy hasn't arrived but you can'thave everything

Raw beef pho is one of my deathbed dishes. Done well it is epic

As I have boringly said before After the very first lockdown we decided as we can’t travel we’d bring Vietnam to us. Have had a pho every week since outside of lockdown bar 2 when we were in Russell
Made day trips to Hamilton and Tauranga just to have a pho

I love Vietnamese in Vietnam, but only ever really ate Pho at breakfast (or occasionally lunch). Sadly, Vietnamese restaurants don't tend to have the wide range of foods you actually find in Vietnam.
The walking food tour in Hanoi is my number 1 tourist attraction in Vietnam.

A lot of Vietnamese restaurants in Akl are actually Chinese run. Sadly one of the worst one I've tried is 5 minutes from my front door. Otherwise I'd eat there all the time. Genuine Vietnamese and really nice people but just not great cooks. Only VN I've had that was greasy

Mostly noodle houses too. All the Vietnamese people I've talked to say Try it out in Otahuhu is the best. It is very good, but Sydney has better

That sound! My daughter is Coeliac, pretty easy to find replacements for everything these days, but there is no GF recipe that comes close to making white bread like that

I dunno if this counts, but I had my first jab today, and I'm positively buzzing! How fucking amazing are our scientists to produce this? And not just the one that went in my arm, many other types. Fucking science rocks - compare 100 years ago. Easy, quick, pain free, awesome. I am so grateful

Science does rock! My family are full of scientists with PhD's in Medicine and Agriculture. Some how the brains skipped me
I always admire my oldest brother with what he does and continues to achieve in medicine, especially anaesthetics. Still happily works in intensive care and hates admin
